This certificate focuses on the fundamentals of fermentation, sensory analysis, quality assurance, CIP (clean-in-place) techniques, and all aspects of beer production. Beer production includes brewing, cellaring and packaging.
Students who complete the Beer - Brewing and Cellaring Certificate of Achievement will be able to:
1. Describe the fermentation process, timeline and ideal environments for the process to take place.
2. Develop recipes and produce beer and other quality fermented products, in a safe manner utilizing equipment comparable to beverage manufacturing operations.
3. Perform all stages of fermentation management related to production, operations, finance, hiring, retail, marketing, laws and regulations (Fermentation Management CA & ASOnly).
4. Function as productive and marketable employees in commercial workplace environments.

The Fermentation Program gives students a broad understanding of the various fermented beverage industries, so students are more desirable and marketable, resulting in greater advancement in the workplace environment. The program focuses on all aspects of beer production, and includes studies of other fermented products. The program includes a beer production laboratory course.
Students who complete an award in the Fermentation program will have a broad understanding of the various fermented beverage industries so they are more desirable and marketable, resulting in greater career opportunities within the industry.
This low-unit award is a new certificate of achievement that is stackable to the Fermentation Management CA that in turn is stackable to the Fermentation Management AS. FERM program verbiage (including award descriptions) is being updated so all three awards align and are reflected appropriately.

MiraCosta College endorses this new program, however, heeds the COE recommendation that the region be cautious considering additional programs being offered in the region.

Mesa College submitted the appropriate LMI from the COE. The COE recommends proceeding with caution when developing a new program because 1) the estimated number of annual job openings (or supply gap) is low and 2) existing programs could meet labor market demand, but few awards have been supplied in the past three years. Colleges should also note that employers require a minimum of a high school diploma for these occupations.
